Note on truffle oil: White truffle oil has a milder, garlicky note. Black truffle oil is earthier and more intense. Either works here. Start with 1 tsp and add more to taste. Truffle oil loses flavour with heat, so always add it after removing the pan from the flame.
HOW TO MAKE TRUFFLE MAC AND CHEESE
- Boil water with a pinch of salt and a few drops of oil. Add WickedGud macaroni and cook on high heat for 3 to 5 minutes. Rinse with ice cold water to stop cooking. Set aside.
- Melt butter in a pan over medium heat. Add flour and whisk for 1 minute to form a roux.
- Pour in milk gradually, whisking constantly to prevent lumps.
- Once the sauce thickens, reduce to low heat. Add mozzarella, cheddar, and parmesan one by one, stirring after each addition until fully melted.
- Season with salt, pepper, and chilli flakes.
- Add the cooked macaroni to the cheese sauce and stir to coat evenly.
