HOW TO MAKE RED SAUCE FUSILLI

  • Boil water with a pinch of salt. Add WickedGud fusilli and cook according to the package instructions until al dente. Drain and set aside.
  • In a pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant but not browned.
  • If using vegetables, add them after the garlic and sauté for 2 to 3 minutes until slightly tender.
  • Add chopped tomatoes, chilli flakes, basil, and oregano. Stir well.

  • Let the sauce simmer uncovered for 10 minutes until the tomatoes break down and the sauce thickens.

  • Gradually add the reserved pasta water, as needed, to loosen the sauce and reach your desired consistency. Season with salt and pepper.
  • Add the cooked fusilli to the sauce and toss for 2 minutes until every spiral is coated.

  • Serve immediately.

TIPS FOR BETTER RED SAUCE FUSILLI

  • Do not skip rinsing the fusilli after cooking. It stops the pasta from clumping while you make the sauce.

  • Simmer the tomato sauce without a lid. Leaving it open lets moisture escape, which concentrates the flavour.

  • Add pasta water gradually. It contains starch that helps the sauce cling to the pasta.

  • Want more depth? Add a small pinch of sugar to balance the acidity of the tomatoes.

FREQUENTLY ASKED QUESTIONS

Why does fusilli work well with red sauce?

Fusilli's spiral shape helps hold onto tomato sauce, making sure each bite is well coated. Its shape works especially well with thicker and chunkier sauces.

Can I use canned tomatoes instead of fresh?

Yes. Use 400ml of canned crushed tomatoes. The sauce will be slightly smoother and thicker. Reduce simmer time to about 7 minutes since canned tomatoes are already cooked.

How do I stop the fusilli from sticking together?

Rinsing with ice cold water after draining helps immediately. Toss the drained pasta with a few drops of olive oil if you are not combining it with the sauce straight away.

Is this red sauce fusilli pasta vegan?

Yes. The base recipe uses no dairy or animal products. Keep it vegan by skipping any cheese garnish.

How long can I store leftover red sauce fusilli?

Store in an airtight container in the fridge for up to 2 days. Reheat in a pan with a small splash of water to loosen the sauce.
